Fermentation takes place in stainless steel tanks with temperature control for about a week. The malolactic fermentation takes place in steel. Refinement in wood used for 3 - 4 months. No filtration intervention, production of about 10,000 bottles / year.
Pair with aged cheeses, Game meats, and Main dishes featuring red meat.
This wine has a protected geographic designation label of DOCG, short for Denominazione di Origine Controllata e Garantita, or “Denomination of Controlled and Guaranteed Origin.” Under Italian wine law DOCG is the highest designation of quality among Italian wines. The DOCG designation was created in 1980 in response to criticisms that there were too many DOCs and their quality was variable. DOCG wines, in contrast, were to be truly the best of what Italian wines could offer.
